Preheat oven at 375 degrees
Fresh Turkey
-
Remove Turkey from bag.
-
Remove Turkey parts-
neck, heart, gizzards and liver- from
cavity before roasting.
-
Rinse and drain Turkey
with cold water, inside and out.
-
Season to taste for best
results add spices to cavity.
-
Lay Turkey on rack in pan
and add 1-2 cups of Citarella
Chicken Stock to bottom of pan. (cover with aluminum
foil tent). Remember to baste every 20 minutes.

Roast Turkey in
pre-heated oven at 375* for approximately
~13 minutes per pound-unstuffed
~15 minutes per pound-stuffed
Or until turkey internal temperature reaches 165*
( insert food thermometer in the innermost part of the
thigh and wing and the thickest part of the breast).

Remove tent approximately
30 minutes before removing
Turkey from oven for a golden color.
~THIS IS A GOOD TIME TO START TO HEAT SIDE DISHES.
-
Remove Turkey from oven
and let rest for 20 minutes
before carving. ~THIS IS A GOOD TIME TO PLACE SIDE
DISHES ON DINNER TABLE.
Cooked Ham
-
Remove from plastic.
-
Place ham- cut end down-
on a rack in roasting pan.
-
Add water to bottom of
pan, cover tightly with foil.
Bake at 325* until meat thermometer reads 135*.
-
Unwrap and apply glaze;
increase heat to 400* and
bake for additional 15 min until glaze is caramel color.
